We are making lots of soup for lunches these days…with the kids at home the snacking has gone through the roof and the easiest way to get lots of goodness into their wee bodies is a hearty bowl of soup! We ran out of bread this week though and rather than nip to the shop we thought we would try a quick loaf! I used the recipe from here.
Ingredients
- 500 g plain flour
- 2 tsp baking powder
- 1 tsp salt
- 310 ml milk
* Heat the oven to 190°C.
* Combine the flour, salt and baking powder in a large bowl and mix together.
* Add the milk, and stir the ingredients until they come together into dough. I initially used a wooden spoon but quickly had to turn the mixture over with my hands to create the dough. Set it on to your work surface and give it a quick knead to make sure the milk is evenly distributed.
* Form into a flat loaf – no more than about 3cm thick. Important! It mustn’t be too thick otherwise it won’t rise or bake through properly. Then score the top in a deep cross.
* Place on a floured baking sheet, then put in the oven and cook for about 35 minutes. The loaf will still be quite pale once cooked. Don’t expect, or wait for it to be golden brown.
It is ready now to serve warm with melted butter and a bowl of delicious soup!
