Blackberries. So many things to make with these beauties that you can forage from pretty much every hedgerow around. My eldest requested this blackberry cobbler that we had made last year and is so straightforward. I have used the cup method for measuring as all the ingredients have pretty much the same amounts:
2 cups blackberries
1/2 cup butter
1 cup sugar
1 cup self raising flour (I used plain flour and added 2 teaspoons of baking powder & 1 teaspoon salt)
1 cup milk
Here we go…
// Preheat the oven to 180 °C
// Melt the butter in the microwave
// Pour cup of sugar into a mixing bowl and add the flour. Mix. Add the milk and mix until you have a smooth batter.
// Add the butter and mix again.
// Butter a dish and pour the batter mix into the base of the dish. Lay the blackberries on the top.
// Place in the oven for 45 minutes.
Serve up with a scoop of ice-cream or soft cream! MMMmmmmm, autumn has begun!
