After a period of (very…ahem!!) unhealthy eating I decided I would give these wee energy bites a go. I have planned to make them for ages but my sugar addiction just spurred me on!
I used inspiration from a taste of Aly’s cacao
protein balls ages ago and from this recipe from Deliciously Ella as a basis…
1 cup Medjool dates
1 cup almonds
1 cup cashew nuts
1 tablespoon coconut oil
1 tablespoon raw cacao
I have a mini chopper…probably the most basic you can get – the type to puree baby food! But it worked a treat. It’s so tiny I had to half the ingredients and make this in 2 batches; a bit of a hassle but still worked.
I put in the nuts (you can use any 2 types of nuts you have in your cupboard) and then added the dates, oil and cacao.
When chopped, tip out the mixture and roll into small balls. Place in the freezer for an hour and then transfer to an airtight tub and keep in the fridge. They can last for up to a couple of weeks…if you can leave them that long without eating them!!
