This is my absolute favourite for lunch and it just doesn’t quite taste the same if you leave one ingredient out! While I have this, Maddie has her bagel with just the smoked salmon and the poached egg…so play about with what they like within the dish and then you’re not making 2 separate lunches!
Quick and easy to make, I have this at least once a week!
Poached Eggs:
*Fill a small saucepan with water and add a drizzle of white wine vinegar
*Bring to a simmer
*Crack your egg into a small bowl
*When the water is ready, with a wooden spoon, make a little whirlpool effect and slide the egg in
*Stir slightly to keep the ‘tails’ of the egg white all together
*Set the timer for 2 minutes
If you are doing more than one, cook them separately and leave them aside when done. When cooking your final egg add any others back into the simmering water at the end for 30 seconds and they can all be served hot together.
*Toast the bagel
*Butter and add spinach, smoked salmon and smear the fresh pine nut pesto over the top. You can make your own but I’ve never been able to make it as good as this one tastes!!
*Chop the plum tomates in half and sprinkle with pepper
*When ready lay the poached egg on top
