This wee recipe is a favourite in our house that my hubby loves to make with the girls. It can be made into a tray bake like these or rolled into balls and dipped in the chocolate…completely your choice!
I simply snapped photos as the girls made. It was noisy, messy and really brilliant…a perfect rainy day activity (or any day for that matter!!)
// Mix the coconut, icing sugar and jelly sachets together.
// Add the condensed milk.
// Spread the mix evenly onto a baking tray lined with greaseproof paper…make about an inch thick.
// Try to make as even as possible and place in fridge for an hour.
// Break the dark chocolate into pieces and place in a glass bowl over a pan of boiling water. Keep stirring as chocolate melts.
// When melted completely pour it over the raspberry mix and spread to cover.
// Place back in the fridge until the chocolate hardens. We left it overnight.
// Cut into individual pieces.
Now go wash all those sticky fingers!!
