When our girls were really little I used to meet up with a friend with three boys under three. On arrival, she’d whip some banana bread fresh out of the oven with a very humble…’it’s such an easy bake.”
And it is…except she had three little boys round her feet and friends coming round for coffee!
Her rule was simple: 8 6 4 2
8oz flour
6oz caster sugar
4oz butter
2 ripe bananas
I found I liked it with chunks of gooey banana in it so I always add 3 bananas but to keep it memorable I still follow the 8,6,4,2 rule.
// Preheat your oven to 160ÂșC
// In a large bowl add your flour and sugar
// Cut your butter into pieces and rub into the flour/sugar mixture
// Mush in your bananas
// Place in a greaseproof lined cake tin and place in oven
// Check after 1 hour…if your skewer comes out clean you’re done.
We made it after tea and we all had it with a glass of milk for our supper.
Unfortunately there was none left for snack the next day…it’s that good!!
