On a journey to less packaging…
I had a moment – the moment you realise HOW MUCH of what you buy is wrapped in single use plastic. You can quickly go from disbelief to despair!
So rather than feel sucked under by the overwhelm, I decided to address a couple of areas and then move on…my first focus is on baking more bread and buns for school lunch boxes instead of ready bought packets and snacks. I have made bread before but I wanted to make something small for the lunches and more appealing to kids than chunky sandwiches.
When I posted this on Instagram I got so many messages asking for the recipe so I thought I’d share it here with the recommendation that it is best eaten when warm! They survived a day but more than that I found they went hard quickly despite being well wrapped up!
I also ran out of strong white flour on my third attempt and used plain flour instead which was not successful!!!!!
So…7 ingredients:
- 1 cup warm water
- 1 tablespoon yeast
- 3 1/4 cups of strong white flour
- 1/4 cup sugar
- 1 egg
- 2 tablespoons butter
- 1 teaspoon salt
Combine all the ingredients in a mixer dish leaving back 1 cup of the flour. Using a dough hook mix together on low for around 5 mins. Gradually add the last cup flour.
Lift out onto surface and knead into a ball. Cover with a damp tea towel and leave for 60-90 minutes until it has doubled in size.
Cut the mixture into small portions and shape into balls.
Grease an ovenproof dish and lay the small balls on the base of this dish. Cover with a damp cloth again and leave for 1 hr.
Place in oven at 180 for 15/20 mins until golden brown.
